The burrata is a typical Apulian fresh cheese that is obtained from cow’s milk or from buffalo’s milk. Obtained from whole, raw or pasteurized milk, the burrata is composed of an outer shell of solid mozzarella dough filled with fresh cream or butter and has a softer consistency than that of the mozzarella itself, especially on the inside.
There are many variations of this fresh burrata cheese, including the mini format, called “burratine”.
The burrata finds its origins in the city of Andra, for its peculiarities it was recognized as Protected Geographical Indication (PGI) “Burrata di Andria”.
